Rice wine recipe, homemade rice wine for Christmas. Making wine at home brings in a festive mood, though I do make wine at home often I have not posted other than the pineapple peel wine. Rice wine is easy to make and even a novice cook can make this easy homemade wine.

Rice wine was the first wine I attempted to make after our marriage and it was so perfect that I was so happy with the result. You do not need any fancy expensive rice for this wine; just simple plain white rice is needed.

The other main ingredient is the black raisin with seeds (the one in the picture). I do not know why, but this wine can only be made with black raisins, not the lighter colored seedless one.

I usually use a ceramic jar or bharani to make wine, you just have to mix all the ingredients in the "bharani", so easy!

INGREDIENTS

  • White rice: 3/4 cup
  • Sugar: 1 1/4 kg
  • Instant yeast: 1 1/2 tsp
  • Lemon: Juice of 4 lemon
  • Black raisin with seeds: 3/4 cup
  • Water: 4, 740 ml bottle

METHOD:

  1. Into a clean sun dried ceramin jar "bharani" add in all the ingredients and mix well.
  2. Keep the lid tighly closed (I wrap tightly with a cloth).
  3. For the next 18 days, open the jar and mix with a wooden spoon morning and evening.
  4. On the 19th day strain to another cleaned jar or clean and dry the same jar and pour into it and keep for another 7 days.
  5. Strain and pour into bottles and keep for another week and then you can start using wine.
  6. This wine is a bit strong and you can have homemade wine in a months time.

NOTES

  • I used 200 ml measuring cup.
  • Do not use basmati rice or any flavored rice, just plain ordinary white rice is perfect.
  • The more you keep the wine, the more strong it becomes as it matures.

      Hi Anusia, these are not black seeds, these are black raisins which is available in supermarkets and bakeries. I live in Kozhikode, Kerala and here it is available at Reliance supermarkets and local bakeries.....hope this helps.

    Hi nisa.
    I jus made tis wine sterday I saved tis recipe the day u posted it. But now 2day after reading these comments I realised tat I dint wash the rice. I just patted it clean and sundried for awhile and used it. Is it goin to make much difference or should i discard the whole batch. For ur info I'm a wine lover but I havnt tasted rice wine yet. Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time.
