Favorite Brunch Recipes for Easter
The best thing about celebrating a holiday is spending time with people we love. The second best thing is the food – although, in this case, it’s a close second! Easter is the perfect occasion to enjoy your family and welcome spring with a delicious Easter breakfast or brunch.
Hosting a big Easter brunch is one of my favorite holiday traditions and something I look forward to every year.Whether we’re celebrating with friends, family or a mixture of both, we love to go all out with a big holiday spread.
This list of Easter breakfast-turned-lunch recipe ideas does not disappoint. You literally could eat your way from breakfast to lunch to dessert without skipping a beat and if you need more ideas checkout my Easter dinner menu! If you are hosting an Easter brunch, planning an Easter buffet so guests can easily pick and choose what they want is a great idea. Traditional items like pancakes, crepes, egg dishes, hard boiled eggs and sweet rolls are great as well as honey baked ham, beef tenderloin and even seasonal vegetables like roasted asparagus are all great ideas for a buffet. For a sweet treat, carrot cake cookies or traditional carrot cake work well.

Brunch is a great opportunity to combine breakfast and lunch items! Plan to provide menu items that range from savory to sweet. This Easter fruit tray is always a welcome addition and don’t forget some juice, coffee and tea for guests.

These are always the crowd favorite. Everyone loves loading them up with toppings like fresh berries, powdered sugar, buttermilk syrup or a dollop of whipped cream.

- BEST Buttermilk Pancakes. I make this throughout the year because they are just that good.

- Blueberry Pancakes. A classic pancake combination that is always a big hit with the family.
- Strawberry Crepes. These are so beautiful and scream spring.
- Lemon Crepes. I love the tartness of lemon for a brunch because it is refreshing and light.

- German Pancakes. It is so fun to watch this puff up, and even better to eat it.

We usually always have a couple of egg dishes on the table including easy hard boiled eggs or deviled eggs of course! The great thing about them is that they can usually be prepped or made in advance. Then it’s one less thing to worry about on the big day. And who can forget potatoes? A classic, delicious and easy breakfast side that are always gone so fast.
- Easy Frittata Recipe. Perfect for serving a crowd, this ham, cheese, and broccoli frittata is quick and easy.
- Eggs Benedict Recipe. A restaurant quality favorite easily made at home with perfect poached eggs!
- Ham and Cheese Quiche. Just 10 minutes to prep this classic combination.
- Overnight Breakfast Casserole with Sausage. Make this the night before and thank yourself in the morning.
- Easy Hash Browns. Talk about the perfect side dish. Crispy on the outside and fluffy on the inside.

Toast and Waffles
More Easter breakfast favorites that are easy and delicious. I personally love the overnight French toast because it can be made in advance and is perfect for serving a crowd. Don’t forget to set out the maple syrup and any other toppings!
- Belgian Waffles. These airy and crispy waffles are a family favorite.
- Easy French Toast Recipe. Fluffy brioche bread is dipped in a vanilla and cinnamon.
- Overnight French Toast Casserole. This make-ahead dish is so easy and gives you extra time in the morning to celebrate the holiday.
- French Bread French Toast. Thick slices of crispy French bread work so well as French toast. I promise.
- How To Make Avocado Toast. There is a reason this became such a popular dish.
- Croffles. It’s both a waffle and croissant together! Flaky and butter, top it how you like savory or sweet!
Scones, Muffins and Rolls
These are great to add to your buffet table. Your guests can easily grab one (or two) as they browse through the other available dishes. You can’t beat a homemade baked good…they taste so fresh and just like they came from a local bakery!
- Overnight Cinnamon Rolls. I love that I can make these the night before and just bake them in the morning.
- Glazed Orange Scones. The citrus adds such a nice brightness to these scones.
- 1 Hour Cinnamon Rolls. Yes, it really takes just 1 hour to beautiful cinnamon rolls.
- Lemon Blueberry Muffins With Sour Cream. These fruity and tangy muffins are topped with a lemon glaze. Absolutely perfect!
- Easy Breakfast Muffins. It takes so little to make these muffins and even less to clean up after.
- Homemade Biscuits. Buttery, fluffy and rich is the only way to describe these biscuits.
- Chocolate Chip Banana Bread Muffins. One of my all-time favorite loaf breads in individual servings.
- The BEST Orange Sweet Rolls. I don’t use “best” lightly, and these are seriously deserving of the title.
Fruit Breakfasts
For a light, fresh and healthy option, it’s always a good idea to have some sort of fresh fruit dish on the table as well as it is a quick breakfast idea to put together. Berries are a great option to include, as they are usually in season spring through summer.
- Yogurt Parfait. I love to start a brunch off with a light bite, like this endlessly adaptable yogurt parfait.
- Baked Oatmeal. Taking less than 10 minutes to prep, this is a great option for a busy holiday morning.
- Berry Fruit Salad with Honey Lime Dressing. This is a must on any brunch table, as it pairs so well with nearly any other dish.
- Rainbow Fruit Kabobs. Kids absolutely love these fun and fruity sticks.
- Easy Breakfast Yogurt Popsicles. Who doesn’t love a popsicle for breakfast, especially one that is good for you?
- Rainbow Fruit Platter. Jazz up the Easter brunch table with a bright splash of color and flavor.
- Easter fruit tray. This platter uses fruit to make the shape of the cutest Easter bunny! Guests won’t be able to resist this one.

Easy and delicious Easter brunch ideas that will please every guest on your list! One of my favorite Easter brunch recipes is this blueberry crepes recipe. The perfect dish to enjoy with your family and welcome spring.

Servings: 14 crepes
Ingredients
Crepe Batter
- 2 cups 2% milk
- 4 large eggs
- 3 Tablespoons salted butter , melted and slightly cooled
- 1 Tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon fine sea salt or table salt
- 1 ½ cups all-purpose flour , sifted if desired
Crepe Filling
- 4 ounces cream cheese , softened
- 2 Tablespoons granulated sugar , or powdered sugar
- ½ teaspoon vanilla extract
- ½ cup whipped cream
Blueberry Sauce
- 1 ½ cups blueberries , fresh or frozen
- ⅓ cup granulated sugar
- ⅓ cup water
- 1 ½ Tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
Crepe Batter
In a blender, blend milk, eggs, butter, sugar, vanilla, salt, and flour, and mix until batter is smooth, about 15-20 seconds. Refrigerate batter at least 30 minutes, or overnight.
Heat an 8-inch frying pan over medium-low heat. Spray with non-stick cooking spray and pour about 1/4 cup batter into the pan, immediately tilting the pan from side to side to form an even circle. Cook about 1-2 minutes per side, or until lightly browned. Remove from heat and stack until ready to serve. Repeat with remaining batter.
Crepe Filling
In a stand mixer fitted with a paddle attachment, beat the cream cheese, sugar, and vanilla until smooth. Mix in the whipped cream until smooth.
Blueberry Sauce
In a medium saucepan, combine the blueberries, sugar, water, lemon juice, and cornstarch. Bring to a boil over medium heat.
Lower the heat and simmer 5 minutes, or until thickened. Mash with a fork to reach desired consistency. Remove from heat and allow to cool for a few minutes.
Lay a crepe on a flat surface and spread 1 to 2 Tablespoons filling down the center. Then pour the blueberry sauce on top. Fold crepe around filling. Repeat with remaining crepes. Fold crepe and serve.
Notes
Make ahead instructions: The batter can be made up to 24 hours in advance and stored in the refrigerator until ready to cook. The filling is best made the same day it is served. The crepes and sauce can be made up to 3 days in advance.
Storage: For the crepes, add to a zip-top bag or covered container and layer parchment in between each crepe. The crepes and sauce can be stored in the fridge for up to 3 days and in the freezer for up to 3 months.
Reheating: Heat in microwave or on the skillet over low heat until warm. You can also place on a baking sheet in the oven at 175°F for 5 minutes, or until warm.
