That’s why meal prepping breakfast is such a good idea. You can make it ahead of time, when you have a little more time, then just heat it up in the morning before work. That just makes life so much easier.

One of our favorite make ahead breakfast recipes is this Bacon And Cheese Egg Bites recipe.

They’re sort of similar to the egg bites Starbucks sells. The flavors are different and the cooking method is different, but they’re similar in shape, size, and practicality.

Ours are better because they’re homemade and a lot more budget-friendly. But they’re also so much easier. The Starbucks version uses a sous vide technique, which isn’t really necessary. So since we skip that, we make these easier.

  • 2 pieces of bacon
  • 6 eggs
  • 3 tablespoons heavy cream
  • 2 ounces mozzarella cheese
  • 2 green onion sprigs
  • 1/8 teaspoon ground onion
  • 1/8 teaspoon freshly ground toasted garlic
  • 1/2 teaspoon freshly ground salt

How To Make Bacon And Cheese Egg Bites:

Pre-heat the oven to 325 F.

Make your bacon. Set it aside to cool completely. Break it into crumbles when it cools.

Add the eggs into a bowl.

Add the heavy cream and mix.

Side note: If you don’t have heavy cream, you can use milk although these taste a little more rich when you use heavy cream.

Shred the mozzarella cheese into the egg mixture and stir.

Cut the green onion into small pieces. Add them into the egg mixture and stir.

Add your crumbled bacon into the mixture and stir.

Add your seasonings. This is a great place to use the FinaMill.Stir until combined.

Take a silicone baking mold and set it on top of a cookie sheet. Make sure one of the ends of the molds lies on the edge of the cookie sheet to keep it flat.

Divide the mixture between the six cavities in the mold.

Bake for 30 minutes.

The egg cups will rise above the pan as they cook but will quickly deflate after the baking mold is removed from the oven.

Let them cool slightly on a wire rack before serving.

Can you use packaged cheese?

Any time you have a recipe that requires cheese to melt, shredding your own block of cheese is the way to go.

See, packaged pre-shredded cheese has preservatives in it that keep it from clumping together in the bag. But, those same preservatives prevent it from melting really well.

So, we always recommend shredding your own cheese. If you only have pre-shredded cheese, that’s fine, but you’ll want to make sure you use a tightly packed (not a loose packed) 2 oz. when making these.

Do you have to make these in a baking mold?

The silicone baking mold we use for these makes them so incredibly easy. You don’t need to prepare it in any way. It doesn’t have to be buttered because it’s non-stick as is. So you just pour the egg mixture in and the egg bites pop out when they’re done.

And no egg is left behind, so clean up is so incredibly easy.

If you don’t have this silicone baking mold, I highly recommend you purchase one. You can use it in this recipe and you can use it to make hot chocolate bombs or tartufo as well.

If you don’t want to buy a mold, you can use a muffin pan. Personally, I don’t recommend it because you need grease the muffin pan and then there’s still a chance of the egg getting stuck in the pan, resulting in a lot of messy clean up for you.

Can you make a version of Vegan Egg Bites?

As long as you use plant based products, like Just Egg for the eggs, plant based cheese, and nut milk, you can make a vegan version of these. Just keep in mind that vegan products may cook a little differently, so you may have to adjust your cooking time.

How do you store leftover Egg Bites?

One of the best things about these Egg Bites is that you can make a bunch at once and eat them for breakfast over the week.

To store them, put the cooled Egg Bites in an air tight container in the fridge. They’ll stay fresh for up to a week.

How do you reheat Egg Bites?

Put an egg bite on a plate and microwave it on high for 30 seconds. Flip it so it’s laying on its side, and microwave for an additional 30 seconds.

You can make these egg bites your own by experimenting with your favorite flavors. Our four favorite alternative versions are below.

Four Cheese Egg Bites

Swap out the bacon and green onions and add Feta, cheddar, and Parmesan cheese in its place. Don’t forget to keep the mozzarella cheese to make this a four cheese version.

Greek Egg Bites

Add Feta, olives, and tomatoes to eggs, heavy cream, and seasoning to make a Greek omelet version of these egg bites.

Meat Lovers Egg Bites

Add cooked breakfast sausage crumbles and small cubes of ham to the egg mixture, in addition to the bacon, to make a meat lovers version of these egg bites.

Vegetarian Egg Bites

Skip the bacon and instead, just add cheese and green onions to your mixture.

What’s great is if there’s no pod in the FinaMill, the button won’t push. So that really extends the battery life. What’s also great is you can adjust the coarseness of the grind at the bottom of the pod. So if you want a finer grind, you can adjust it.
